If you are coming for an event at TSTC, the hotels that would be best for you are located along I-35. Use the above map as approximate locations and not as scientific 
latitude and longitude!
The hotels are
This area is easy access to TSTC by car, and is surrounded by fast food restaurants as well as an HEB and Walmart nearby. If you are looking for a sit down restaurant other than Cracker Barrell, you will need to head further in to Waco for that. There is also a Starbucks nearby and plenty of gas stations.
The area around the hotels is a safe one (in my opinion, but I am not a police officer ), but since most of the establishments along I-35 are tailored to highway traffic, most stuff is easier to access by car.
